Life in Thailand
I spent a month in Thailand during the summer of 2016 for my father's wedding. It was an amazing experience.
My father got married in a Buddhist temple. It was quite a fascinating experience to witness.
My father has lived in China and Thailand for 5+ years, but it was my first time visiting him and his newly wed wife. I fell in love. The country is beautiful and the people are so friendly. We stayed in Chiang Mai for 3 weeks and in Bangkok for 1 week.
Chiang Mai was a beautiful city in Northern Thailand. It was surrounded by mountains and forests with hidden Buddhist temples around every corner. Northern thailand is very popular for the famous dish, Khao Soi, an instant favorite. Once I discovered this dish it was almost all I ate for a few weeks.
Flat egg noodles in a curry. The medium-spicy turmeric-tinted curry of chicken has a certain tartness from fresh lime and pickled cabbage. Fresh shallot adds another layer of complexity to the taste. Crispy noodles top this unique dish. One of a kind.
One of the most memorable moments was getting to ride and bathe with the elephants. I am usually very wary about these types of adventures because I worry that they don't treat the animals very well. However, we made sure to go to an elephant sanctuary that took very good care of their elephants.
